Vegan Chocolate Red Kidney Donuts

A long-awaited moment is here: I’m posting my favourite donuts recipe! (so far, because I’ll try others in the future).

Since I’ve switched to a plant-based diet, my sweet tooth increased more and more. So, the kitchen apron with nude prints, which used to gather dust on a nail, has become a must-have in the field of “latest trends” to wear around the house.

Since legumes are the main source of protein for us vegans, I decided to incorporate in the recipe some beans, thus making the donuts both filling and delicious. I used Red Kidney Beans, which I had around the house, but I can’t see why others couldn’t be used, instead.

The recipe mustn’t be vegan, it can be adapted to other diets. Anyway, it’s easy to make and you’ll soon master it. I promise there will be a 2nd, and 3rd, and 4th time you’ll make it, because you may quickly fall in love with the taste.

Ingredients

  • 350 ml almond milk use more if you like your batter more liquid
  • 1 tablespoon vanilla extract
  • 100 g coconut sugar organic
  • 125 g cocoa powder unsweetened
  • 150 g rice flour or quinoa flour for GF donuts, whole wheat flour for regular
  • 2 teaspoons baking powder gluten free
  • 100 g vegan dark chocolate
  • 5 tbsp hazelnut brittle or walnut brittle or you can also sub it with cocoa nibs or coconut flakes instead
  • 1/2 can red kidney beans

Instructions

  1. Rinse and drain the kidney beans.
  2. Place them into a blender together with the coconut sugar, almond milk, and cocoa powder and blend until the mixture is smooth.
  3. Transfer the composition to a medium-sized bowl and stir in the flour, the baking powder, and vanilla.
  4. Spray the donut pan with cooking spray or grease it with vegan butter.
  5. Either use a spoon to fill each donut or fill the batter into a Ziploc bag and cut off one edge.
  6. Preheat the oven to 175 C /350 °F and bake the Vegan Chocolate Red Kidney Donuts for 9-11 minutes. Allow to cool down in the pan for a couple of minutes, then move them to a cooling rack.
  7. In the meantime, make the chocolate glaze. Melt 100 g vegan dark chocolate by placing it into a heatproof bowl and place it over a pan of barely simmering water.
  8. Once melted, cover the donuts with the chocolate and sprinkle with hazelnut or walnut brittle.
